In the evening, as the sun goes down in Pisa, the vegetables come out. The downtown is peppered with farmer’s tables: eggplant, squash with their blossoms still attached, mushrooms, beets, peppers, turnips … the night markets make their own kind of rainbow. The Italians idealize their vegetables, and encourage them into deliciousness with nuts and olive oil and vinegar and cheeses and herbs. That’s what inspired me to create our menu for July 19 and 20. A vegetable-rich dinner, with a little duck for duck’s sake. And cherries, from Idiot’s Grace in Mosier, who will also be providing our wines for the night.
